A little crunch from the crust, creaminess from the mozzarella, saltiness from the salami and olives, and bit of pepper from the arugula. Add a few pinches of red pepper flakes and you have the perfect bite of pizza.
Weekend pizza nights are a thing around my house. The whole family gets involved with cooking, there is good conversation, and I love adding a good green salad with some ranch dressing on the side.
Ingredients
I like to make my own sourdough pizza crust although store-bought will work as well. Just choose your favorite jarred marinara sauce. The mix of the tomato sauce, salty salami and green olives, gooey mozzarella, peppery arugula, and a little kick of chili flakes makes for the perfect bite. The crust is crunchy on the outside and soft in the middle. This will become a favorite in your home and it doesnโt take much effort.

- Pizza dough
- Marinara Sauce

Instructions
First, you will want to make sure your pizza dough is at room temperature. I like to place ยฝ a pound of pizza dough on a parchment lined baking sheet that has been greased. Avocado oil spray on the parchment paper works well. Form the dough into a round ball and place on the baking sheet. Spray a bit more oil on the ball of dough and cover with plastic wrap. Not tightly or it will not allow the dough to have enough room as it comes to room temperature. It might take a couple of hours to come to room temperature depending on how warm or cool your house is.
Meanwhile, preheat your oven to 450 degrees. Once the dough is at room temperature, then remove the plastic wrap from the dough and spread it as evenly as possible on the pan. Itโs ok if it doesnโt quite reach the edges of the rimmed sheet pan. After that, bake each pizza crust on the bottom rack of the oven for 10-12 minutes until golden brown on the bottom crust.

Next
Remove from the oven and then spread ยฝ of a cup of your favorite marinara sauce on the cooked crust. Next add the salami, sliced red onion, sliced olives, and sliced mozzarella. Place the pizza back into the oven on the bottom rack for 12-15 minutes. The time will vary as it depends on if you are cooking with electric, gas, or how well your oven works.
Once the mozzarella is bubbling and beginning to brown on the top, remove from the oven. Additionally, bake the second pizza. Top the cooked pizza immediately with one cup of arugula and a few pinches of chili flakes. The pizza is mediocre without the chili flakes and peppery arugula. Slice the pizza into squares, serve, and enjoy!
Substitutions
- Fresh Mozzarella - instead of fresh mozzarella just grate a block of mozzarella cheese. Use about 1 ยฝ-2 cups of a block of mozzarella cheese per pizza.
- Pre Made Pizza Dough - if you want to make your own pizza dough and you enjoy making sourdough, this is the recipe I enjoy using when I have some extra time. Just know that this pizza dough recipe makes slightly more than ยฝ a pound of dough per pizza.
- Red Onion - shallots can be substituted in place of the red onion.

Equipment
I like to make pizza on a large sheet pan instead of a pizza stone because it cuts the cooking time in half. In conclusion, when you are feeding a family, time savers are a friend.
These are the stainless steel sheet pans I use.
Storage
Store the cooked pizza sliced in squares in a 9x13 glass baking dish. Cover with plastic wrap or lid that comes with the glass baking dish. The pizza will stay fresh for up to 5 days.
These ingredients do/donโt stand up well to freezing.
Top tip
Ensure when you are baking the crust on its own without toppings, that it's a golden brown crust color on the bottom. Lift the crust with a metal spatula to check the doneness. If it isnโt golden brown, the dough will be soft and the final result will be soft and flimsy pizza that cannot hold the toppings well.
